If you are like me you are thinking about health related New Year’s Resolutions and/or the best detox/cleanse out there to clear out some of the holiday bloating! Since having children, each year I try to think of a new solution for how I am going to get my children to eat more vegetables. When they were little I was relentless about eating 3 pieces of broccoli and to this day my kids know that eating their broccoli is non-negotiable. This was great but expanding their horizons on vegetables hasn’t been the easiest issue to overcome.
The juice craze has been out there for several years and I have to be honest, I avoided this like the plague because I have PTSD from the vegetable juice I was forced to drink every night as a young child. Keep in mind, this was over 30 years ago that my parents were juicing – and this juice only had vegetables, no fruit, or anything with a lot of juice quite honestly; this “juice” was made of vegetables like spinach and beets and anything else they were growing in their garden that season. The smell alone was enough to make it unbearable…
Anyway, enough about my traumatic experiences and onto my watered down version of green juice that has passed the Pierce test. This juice is sweet and it also has some good veggies hidden in there that my kids actually ask for their green juice! So, twice a week we make this juice – the kids love it and it makes me feel like they are getting a good dose of veggies – so that’s a win/win in my book! The quantities below will give you a good 4 full glasses of juice:
- 4 fuji apples
- 4-6 stalks of celery
- 1 bunch of fresh kale
- 3 cups of carrots
To a year of health in 2016 and happy juicing!
